I’m sure everyone is wondering what happened with the peppermint stick cupcakes I baked last month for a contest at work. On the edge of your seat, I know.
Well, the bad news is that I did not win the dessert contest. ;_; I think the 3 winners were a lemon-raspberry tart, a seven layer bar, and a chocolate gingerbread bread pudding. I don’t really mind losing (except to the seven layer bar…I know for a FACT those come out of a box! FAIL!); it was still fun to have a baking experiment, and I hear the other winning items were very good (they were gone before I could snag a bite….that’s probably a good sign).
The good news is that I got more compliments on the cupcakes at the contest and over Christmas. I had 2 cupcakes left over Christmas vacation that got split up amongst family, and all were pleased. I was definitely happy about it.
Maybe another time I’ll see if I can do anything to make the layers more even instead of all lumpy. Plus my ganache needs some work. Any suggestions on how I could make it more opaque? Maybe I need to let it sit longer before pouring…maybe I need to use better quality chocolate?

Boo on the complete lack of originality of desserts from a box in a dessert competition! I hope the winner forwarded the prize to Mrs. Crocker.
I’m sorry, but those people were on crack to let a box dessert into the top three. I love the cross-section! As for the ganache, maybe use more chocolate/less cream? Or yeah, maybe letting it sit to thicken up would do the trick. I’m sure Victoria will have some input. 🙂

@Jessica – Despite the lumpy layers, I thought the cross-section looked cool. 😀 I think I should have let it sit longer, but I was antsy and I had never made ganache before, so didn’t know any better. Hmm…
