Easy Dutch Oven Peach Cobbler

Did you have a good Memorial Day weekend, if you celebrate such a thing?  I certainly hope so.  Few things beat a sunny long weekend with friends and family.  And the following four-day work week.  Nothing beats that either (except maybe a three-day work week).

Ripley

Ripley surveying her picinic domain.

I was lucky enough to spend my extended weekend with a whole slew of people I like including friends, parents, Teh Boyfriend, TBF’s family, and even my brother and his girlfriend who flew in from their respective states for a wedding.  Good times were had by all.  *confetti*

Sunday my family and TBF spent the day at Lake Lanier with some good food and kayaking.  Plus, my father made and oldie-but-goodie recipe of his – dutch oven peach cobbler.  Even for someone like me who doesn’t particularly care for peaches, this recipe always kills.  Probably because it’s mostly cake and sugar.  Mmm.

Delicious and nutritious.

Whenever the family’s together we tend to reminisce on the same stories about cobbler, including the fact that I “don’t like peaches” but still manage to eat my share of the dessert, as well as the famous blueberry cobbler fiasco in which we all ended up eating green cake out of the dutch oven.  Always good times.

There’s not a whole lot to say about this recipe in particular, other than that it’s great for a picnic, and I’m sure is just as easy to make if you don’t have a dutch oven (just throw it in a 9×9 or 9×13 pan and stick in in the oven at 350F).  So next time you’re out in the sun with friends, consider this easy-peasy recipe.

Dad’s Easy Dutch Oven Peach Cobbler

Ingredients:

  • 1 box yellow cake mix (not a super-moist cake IE, no pudding added)
  • 1 16oz can peaches

Instructions:

  1. Prepare your charcoal ahead of time so it’s white/gray and smouldering.
  2. Empty the yellow cake mix into a bowl (or for uber-ease, a ziplock bag).
  3. Drain the syrup from the can of peaches into the bowl/ziplock of cake mix and mix thoroughly (if the yellow cake mix box calls for eggs – ignore it!).
  4. Empty the peaches into the dutch oven and spread evenly on the bottom.
  5. Layer the cake mix on top of the peaches and spread evenly.
  6. Put the lid on the dutch oven and add charcoal below it and on top of the lid.
  7. Cook for ~30 mins.
  8. Consume when top is golden brown!

  1. MMmm, this brings back some good, sugary memories – what was that crazy-sweet berry cobbler thing the Salleys were always making? Glad you had such a fab Memorial Day!

  2. That is the best pic of Ripley I’ve seen yet. Not only does she look good, she also looks a lot bigger than she is. Yay, perspective!

  3. Hold up: you don’t like peaches?! Aren’t you in Peach State, and haven’t you been making peach cakes? O_o I just had my second peach of this year today and it took me to a happy place. Anyway, I love how this cobbler is made! My mind is kind of blown by how simple and easy it is. And campfire-y! Yummm.

  4. @Anna – It really was nice to drag it out of the closet and relive some old camping days. 😀 I’m not sure I remember the Salleys’ dessert…I do remember the fruit compote though. 😀

@emily – She also looks significantly less spastic than she usually is. Yay perspective! ^_^

@Jessica – Yeah….peaches have never really done much for me. >.> Though these days I’ve been finding more recipes I don’t mind as much…so maybe I’m a dirty liar!
